Ghee is clarified butter. You can make your own easily or buy it. What I love about ghee is that it has so many health benefits. Ghee is the highest known food source of butyric acid according to Dr. John Douillard, author of The Three Season Diet and practicing Ayurvedic doctor. Butyric acid is a short chain fatty acid that our body should naturally produce when we consume fermentable fiber.
Many people with gut dysbiosis are low on butyric acid and have difficulty digesting fiber. Butyric acid helps lower blood sugar, cholesterol, decrease inflammation, and overall risk of disease, and is the fuel for our colon cells to function properly. When our digestion is working well we have better overall immunity and there is also a strong correlation between butyric acid and immune functioning. Ghee is also rich in antioxidants, fights harmful effects of free radicals, and increases the absorption of nutrients when spices are cooked in ghee according to Shubhara Krishan, author of Essential Ayurveda.
