1.5 cups buckwheat flour
1 cup coconut flour
2 teaspoons baking powder
2 tablespoons ground flax and chia seeds soaked in
4 tablespoons water

10 chopped fresh stevia leaves. I was growing them when I made this recipe so depends on the season! (or stevia to taste. I like to get the one that is green. Stevia is a green plant and white stevia is therefore processed.)
1 teaspoon pure vanilla extract
2 eggs2 teaspoons
coconut oil
1/2 cup coconut milk (I like to get the one with no guar gum)
1 teaspoon cinnamon
10 chopped fresh stevia leaves. I was growing them when I made this recipe so depends on the season! (or stevia to taste. I like to get the one that is green. Stevia is a green plant and white stevia is therefore processed.)

Instructions:
Combine all dry ingredients.
Combine all wet ingredients.
Slowly pour wet ingredients into dry ingredients while mixing.
Work with dough with your hands, you may have to add about 1/4 cup of buckwheat flour as you are working with it to get bread like consistency
Pour in greased loaf pan
Bake at 175C or 350F for approximately 30-45 minutes. Bread is done when a toothpick runs clean through the center.
Serve and enjoy!
